SEPTEMBER 2009. DEMUS LAB TRAINING GOES ON.
Demus Lab proposes an extraordinary session of training courses in September. The courses, destined to professionals of the entire coffee sector, are being held in the following days:
- 28 September – Green Coffee Classification.
The course will deal with coffee history and botanical features. Aspects of the green coffee market and coffee classification will then be thoroughly analysed. The practical part will consist in sample tasting of espresso and Brazilian preparations of some arabica and robusta samples.
- 29 September – Coffee Roasting for the Espresso.
The theoretical part will deal with an overall analysis of the roasting process (techniques, tools, roasting curves, control, roasted coffee features and so on). Single-origin coffees and blends – also decaffeinated – processed with different roasting curves will be tasted. Moreover, during the practical part, participants will have the chance to visit a roasting company and see different possible roasting processes.
- 30 September – Coffee Blending for the Espresso and Espresso Tasting Techniques.
This course includes the following topics: espresso extraction, the influence of green coffee processing method on the cup, the roasting process, the choice of coffee types for blending and quality control, tasting and evaluation of the organoleptic features of the espresso. Decaffeinated coffee and decaffeination will be also thoroughly analysed.
